The H Billiot estate is comprised of 5 hectares of Grand Cru vineyards spread across 18 different mid-slope parcels of limestone in Ambonnay. Upon release, the wines are snapped up by in-the-know wine enthusiasts seeking 100% Grand Cru fizz at an entry-level price.
Owned and operated by Laetitia Billiot, the vineyards have been in the family since the early 20th century. Whilst pressing grapes for Mumm and Moët & Chandon, Laetitia's great -great-grandfather Louis Billiot decided to bottle some of his own wine. Henri Billiot (Laetitia's grandfather) created Champagne H.Billiot et Fils after he inherited the vineyards.
Laetitia is a force to be reckoned with. She runs the small but very busy estate as well as looking after her family and is a perfect example of how young women are making a huge impact on the wine world.
The wines are fermented in enamel-lined steel vats. Malolactic fermentation is blocked, as the wines are already quite rich due to the maturity of the vines. The wines are neither fined nor filtered.
